The Recipe
Ingredients:
- 4 large bell peppers (any color)
- 1 cup cooked rice
- 1 pound minced chicken
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup mashed tomatoes
- 1/2 cup sliced olives (black or green, as per your preference)
- 1/4 cup chopped fresh chives
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded mozzarella cheese
Instructions:
- Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
- Cut the tops off the bell peppers and remove the seeds and membranes. Rinse the peppers and set them aside.
- In a large skillet, heat some oil over medium heat. Add the minced chicken, chopped onion, and minced garlic. Cook until the chicken is browned and the onion is translucent.
- Stir in the cooked rice, mashed tomatoes, sliced black olives, dried oregano, dried basil, salt, and black pepper. Mix well to combine.
- Spoon the chicken and rice mixture into each bell pepper, filling them generously. Place the stuffed peppers in the greased baking dish.
- Cover the baking dish with foil and bake in the preheated oven for 30 minutes.
- Remove the foil and sprinkle the shredded mozzarella cheese over the stuffed peppers.
- Return the dish to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and lightly golden.
- Remove from the oven and let the stuffed peppers cool for a few minutes before serving.
