Our Mediterranean Chicken Stuffed Peppers are a delectable fusion of flavors. Succulent minced chicken, fluffy rice, and a harmonious blend of mashed tomatoes and black olives are stuffed into vibrant bell peppers.

Recipe: Mediterranean Chicken Stuffed Peppers

The Recipe

Ingredients:

  • 4 large bell peppers (any color)
  • 1 cup cooked rice
  • 1 pound minced chicken
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup mashed tomatoes
  • 1/2 cup sliced olives (black or green, as per your preference)
  • 1/4 cup chopped fresh chives
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded mozzarella cheese

Instructions:

  1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
  2. Cut the tops off the bell peppers and remove the seeds and membranes. Rinse the peppers and set them aside.
  3. In a large skillet, heat some oil over medium heat. Add the minced chicken, chopped onion, and minced garlic. Cook until the chicken is browned and the onion is translucent.
  4. Stir in the cooked rice, mashed tomatoes, sliced black olives, dried oregano, dried basil, salt, and black pepper. Mix well to combine.
  5. Spoon the chicken and rice mixture into each bell pepper, filling them generously. Place the stuffed peppers in the greased baking dish.
  6. Cover the baking dish with foil and bake in the preheated oven for 30 minutes.
  7. Remove the foil and sprinkle the shredded mozzarella cheese over the stuffed peppers.
  8. Return the dish to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and lightly golden.
  9. Remove from the oven and let the stuffed peppers cool for a few minutes before serving.
